Step 1

Rinse and dry the tomatoes, cut them into slices. Rinse the artichoke bottoms, drain them and cut them into thick strips. Pit and slice the olives.

Step 2

In a salad bowl, mix the vinegar, salt and pepper, for the oil while whisking. Add the artichoke bottoms, tomatoes, olives, lettuce and diced feta cheese.

Step 3

Mix, sprinkle the salad with the chopped parsley and give it a turn of the pepper mill. Serve chilled.
