Step 1

Quickly rehydrate figs and apricots in a mixture of equal parts port and hot water.

Preheat the oven grill. Butter the bread slices. Season generously with pepper and cut into long strips.

Drain the dried fruits, pat them dry and cut them in half. Arrange them on the bread strips and surround them with ham.
