Directions
Remove the zest from the orange and cut it into thin sticks. Also cut the ginger into sticks.
Heat the butter and oil in a large skillet over high heat. Fry the scampi for 1 minute.
Add the zest and ginger sticks. Continue cooking for 3 minutes, stirring constantly.
Remove from heat, season with salt and pepper and sprinkle with herbs. Cover the pan and leave to stand for 2 minutes before serving. Provide finger rinses.
