Mango With Basil And Passion Fruit
Directions
Peel and dice the mangoes. Squeeze the lime. Cut the passion fruit in half and put the pulp in a container. Add the diced mango and the lemon juice.
Heat the maple syrup in a saucepan. Remove from the heat, add four basil leaves and let infuse for 15 minutes. Strain, for the syrup on the fruits. Let macerate 1h in the refrigerator.
Just before serving, divide the mango salad into cups or flared glasses and top with a scoop of sorbet. Drizzle with the macerated juice and garnish with basil leaves. Serve without waiting, accompanied by tuiles or small shortbread.
